Last week we were able to spend the week relaxing in New Mexico. We attended a wedding in Lubbock and then made the drive to the Sangre de Cristo mountains in north central New Mexico. The plains of northeast New Mexico are beautiful, so we really appreciated our drive to the mountains. We spent most of our time outside taking in the scenery, whether hiking or from the car. We really enjoyed our time together as a family.

Tasty Tomatoes
Do you have lots of tomatoes and need something to do with them? I have the perfect recipe given to me by my friend Mindy. Funny thing, I don't really care for tomatoes (don't ask me why we have 7 tomato plants, I don't even know) but I love this recipe! We have some basil growing as well, so I've been making this side regularly. It is so fresh tasting and nice for these hot days.
3 large tomatoes
1/3 cup olive oil
1/4 cup red wine vinegar
1 tsp salt
1/4 tsp pepper
1/2 garlic clove, chopped
1 TB chopped parsley
1 TB fresh chopped basil or 1 tsp dried basil
2 TB chopped onion
Cut tomatoes into 1/2 inch slices and arrange in a shallow dish. Combine remaining ingredients in a jar with lid. Shake well and pour over tomato slices. Marinate for 2 to 24 hours.
